Slow Cooker Sunday: Simple Chicken Soup

I’ve been looking for an excuse to use my new programmable crock pot. I love that I can set the cook time and heat level, and when the time’s up, it switches to the Keep Warm setting. How cool is that?? The only way it could be cooler is if it could be programmed to start at one temperature and switch to the other after a certain time. #firstworldproblems

What to cook in it now that it’s summer? I wondered. I thought chicken broth would be nice, and I could use the chicken meat for other meals. But I wanted it to be fairly inexpensive and not too complicated in flavor. Tossed in some onion, garlic, a bay leaf, and rosemary before dropping a whole chicken in.

About a teaspoon of dried rosemary

Dump aromatics into crock

White peppercorns


Sprinkle with salt and lots of ground pepper. Add a cup of chicken broth.

Set on High for one hour, then turn to Low for five hours

Lift drumstick and watch meat fall off bone as entire leg separates from chicken. Weep with joy.

    • It took me all of ten minutes to slap together, and it’s so nice to use the slow cooker. The chicken releases quite a bit of fat as it cooks, but it also lets out yummy juices too, and once the broth is skimmed, both broth and meat can be consumed plain or doctored up with other stuff.
